Method
- Pre-heat the bruno sandwich maker with the taiyaki plate installed (At least 4 minutes before grilling)
Fillings
- Peel the skin off the carrot
- Dice the carrot and the duck breast with knife
- Wash the carrot and duck breast, boil together for 5 minutes on medium heat (or until cooked & softened). Drain & set aside to cool
Taiyaki Batter
- Separate the egg whites and egg yolks into two bowls
- Sieve the rice flour into the egg yolk, add the lactose-free milk as well
- Use the hand mixer to beat the egg whites until stiff peak is formed
- gently fold 1/3 of the egg whites into the yolk mixture
- once it is mostly combined, repeat for the rest of the egg whites, adding 1/3 of the egg whites at a time
- Transfer the batter into a piping bag and cut tip when ready to grill
Taiyaki grilling
- Open the pre-heated sandwich maker, lightly spray oil onto the plates
- Start filling out the shape of the fish from the border towards the centre, fill till about 90% full
- sprinkle the duck breast & carrots onto the centre, then cover with just enough batter to cover it
- Close & lock the sandwich maker, grill for 3.5 minutes
- Remove taiyaki from the plate and let it cool before serving
- Allow the sandwich maker to pre-heat 1-2 minutes before making the next batch

- 預熱已裝上鯛魚燒模嘅 BRUNO 三文治機 (烤製前預熱最少4分鐘)
餡料
- 紅蘿蔔去皮
- 紅蘿蔔同鴨胸切粒
- 將紅蘿蔔同鴨胸沖洗乾淨,中火煮約 5 分鐘(或煮至熟透變軟),隔水瀝乾後放涼備用
鯛魚燒麵糊
- 將蛋白同蛋黃分開,放入兩個碗
- 將米粉過篩加入蛋黃內,再加入無乳糖牛奶
- 將 1/3 蛋白輕輕拌入蛋黃糊中
- 混合至大致均勻後,分次加入剩餘蛋白(每次約 1/3),輕輕拌勻
- 將麵糊倒入擠花袋,預備好烤製時剪開袋口
鯛魚燒烤製
- 打開已預熱嘅三文治機,在模具上輕輕噴一層油
- 由魚形邊緣開始擠入麵糊至中間,填至約 90% 滿
- 將鴨胸同紅蘿蔔放喺中間,再加適量麵糊覆蓋餡料
- 闔上並鎖好三文治機,烤約 3.5 分鐘
- 取出鯛魚燒,放涼後先好食用
- 每次做下一批之前,讓三文治機再預熱 1–2 分鐘
