呢款狗狗專用鯛魚燒係一款健康又有趣嘅自家製小食,使用鴨胸同紅蘿蔔製作,簡單又營養豐富。外層鬆軟,內餡香口,非常適合作為零食或者訓練獎勵。
用鯛魚燒模整成可愛魚形,不單止賣相吸引,亦方便分份餵食。全程無添加糖同多餘調味,採用對狗狗友善嘅天然食材,食得更安心。

Ingredients
  

  • 2 pcs Egg 雞蛋
  • 80 g Rice Flour 米粉 (白米磨成的麵粉,不是平時食麵那種米粉啊~)
  • 40 g Lactose Free Milk 無乳糖牛奶
  • spray of Olive Oil 橄欖油
  • 30 g Skinless Duck Breast 去皮鴨胸肉
  • 20 g Carrot 紅蘿蔔

Equipment

  • 1 Bruno Hot Sandwich Maker – Taiyaki Fish Plate Bruno 三文治機 – 鯛魚烤盤
  • 1 Bruno Hot Sandwich Maker Bruno 三文治機
  • 1 Hand Mixer 打蛋器
  • 1 Peeler 削皮器
  • 1 Piping Bag 擠袋

Method
 

  1. Pre-heat the bruno sandwich maker with the taiyaki plate installed (At least 4 minutes before grilling)
Fillings
  1. Peel the skin off the carrot
  2. Dice the carrot and the duck breast with knife
  3. Wash the carrot and duck breast, boil together for 5 minutes on medium heat (or until cooked & softened). Drain & set aside to cool
Taiyaki Batter
  1. Separate the egg whites and egg yolks into two bowls
  2. Sieve the rice flour into the egg yolk, add the lactose-free milk as well
  3. Use the hand mixer to beat the egg whites until stiff peak is formed
  4. gently fold 1/3 of the egg whites into the yolk mixture
  5. once it is mostly combined, repeat for the rest of the egg whites, adding 1/3 of the egg whites at a time
  6. Transfer the batter into a piping bag and cut tip when ready to grill
Taiyaki grilling
  1. Open the pre-heated sandwich maker, lightly spray oil onto the plates
  2. Start filling out the shape of the fish from the border towards the centre, fill till about 90% full
  3. sprinkle the duck breast & carrots onto the centre, then cover with just enough batter to cover it
  4. Close & lock the sandwich maker, grill for 3.5 minutes
  5. Remove taiyaki from the plate and let it cool before serving
  6. Allow the sandwich maker to pre-heat 1-2 minutes before making the next batch

  1. 預熱已裝上鯛魚燒模嘅 BRUNO 三文治機 (烤製前預熱最少4分鐘)
餡料
  1. 紅蘿蔔去皮
  2. 紅蘿蔔同鴨胸切粒
  3. 將紅蘿蔔同鴨胸沖洗乾淨,中火煮約 5 分鐘(或煮至熟透變軟),隔水瀝乾後放涼備用
鯛魚燒麵糊
  1. 將蛋白同蛋黃分開,放入兩個碗
  2. 將米粉過篩加入蛋黃內,再加入無乳糖牛奶
  3. 將 1/3 蛋白輕輕拌入蛋黃糊中
  4. 混合至大致均勻後,分次加入剩餘蛋白(每次約 1/3),輕輕拌勻
  5. 將麵糊倒入擠花袋,預備好烤製時剪開袋口
鯛魚燒烤製
  1. 打開已預熱嘅三文治機,在模具上輕輕噴一層油
  2. 由魚形邊緣開始擠入麵糊至中間,填至約 90% 滿
  3. 將鴨胸同紅蘿蔔放喺中間,再加適量麵糊覆蓋餡料
  4. 闔上並鎖好三文治機,烤約 3.5 分鐘
  5. 取出鯛魚燒,放涼後先好食用
  6. 每次做下一批之前,讓三文治機再預熱 1–2 分鐘
